Lasagna is one of the oldest known formats. It probably corresponds to the Latin ‘Lagana’ (in turn derived from the Greek ‘laganon’: large, flat sheet of pasta cut into strips). Always one of the best-known and most popular formats in Italian cuisine, the most widespread and simplest recipe calls for ragù (meat sauce), béchamel sauce and Parmesan cheese as seasoning, while mozzarella cheese has recently been introduced.
